Divine Banana Bread

Gluten-Free Banana Bread Recipe

Gluten-free | Diary-free | Vegan 

There are multiple adjustments that can be made; ingredients will be labeled as “(optional)”

I am going to make it as simple as possible, no need for extra reading. I hope you enjoy!

Serving: 16 pieces 
Materials:
  • Medium sized loaf pan 
  • Masher
  • Fork 
  • Measurement spoons
  • Measurement cups
  • One Medium Large Bowl
Dry Ingredients:
  • 1 teaspoon of baking soda
    • helps bread to rise
  • 1 1/2 cups of gluten-free flour
    • I use the King Arthur Gluten-free Flour that has xanthan gum, but if yours does not have some use 1/4 of a teaspoon
  • Pinch of salt
Wet Ingredients: 
  • 1 teaspoon of pure vanilla extract 
  • 3 to 4 ripe banana 
    • make sure they are soft and mush | they should have brown spots or almost fully brown
  • 1/3 cup of melted butter
    • coconut oil, avocado oil, non-diary butter, or applesauce can be used with an 1:1 ratio
  • 3/4 of a cup of coconut sugar
    • honey, maple syrup, or granulated sugar can be used (1:1 ratio)
  • 2 Eggs 
    • Beat into the mix
Mix-ins:
  • 1/4 to 1/2 cup of Semi-sweet chocolate chips
    • The measurement is your preference 
    • I added certified gluten-free oats on top
    • For some sweetness they can be added on top only
Instructions:

  1. Preheat your oven to 350 degree Fahrenheit
  2. Grease your loaf pan
  3. Grab a medium large bowl and begin mashing the 3-4 bananas until smooth with masher or fork 
  4. Add and mix in the same bowl the rest of the wet ingredients 
  5. Mix in the dry ingredients
  6. Add or sprinkle on top your chocolate chips 
  7. Add your batter into the loaf pan 
  8. Leave in the oven and allow to bake for 50 mins to 1 hour
    • If your convection option is turned on cook for about 40 to 45 mins.
     9.  Check the banana bread by sticking a knife and seeing if it comes out clean it is complete 
    • To be honest it is your preference | if you like it mushy then check the firmness 
    10. Let it cool for 5 to 10 mins.
    11. Then enjoy!!

It can be stored in an airtight container either in the fridge or left out.
