Tangy Ginger Oatmeal

Gluten-Free Ginger Oatmeal Recipe

Gluten-free | Vegan 

It is a microwaveable recipe 

I am going to make it as simple as possible, no need for extra reading. I hope you enjoy!

Serving: 1 bowl
Materials:
  • A medium mixing bowl 
  • A serving bowl
  • 1/4 and 1/2 Dry Measuring Cups
  • Microwave
  • 2 Common Table spoon
Ingredients:
  • 1/2 cup Gluten-free Quick Oats
    • I use Red Bob Mills but any other brand or oats can be used 
    • Rolled oats and steel cut may be used
  • 1/2 cup Whole Milk
    • Other milks can be used like almond, oat, coconut or soy to keep the recipe vegan
    • I personally use Organic Whole Milk because it provides a put together creamy texture
  • 1 tablespoon Peanut butter
    • Allergen friendly butters can also be used like sunflower, almond, or cookie.
    • It’s just used to further develop the creamy texture.
  • 1/2 teaspoon Cinnamon
    • Optional just for a traditional taste
  • Two small brown sugar cubes 
    • 2 Tablespoons of white sugar, monk fruit, maple syrup, agave, or honey can be used
  • 1/3 cup Greek yogurt
    • Whole milk yogurt, soy yogurt, almond milk yogurt, coconut yogurt can used also
    • I use Trader Joes honey and vanilla low fat Greek yogurt  
  • 1 1/2 - 1 teaspoon Ground ginger 
    • This for topping
    • This is the main event of the meal, trust me it is really tasty and goodful.  
Instructions:
  1. In a big mixing bowl place oats and milk, mix to fully cover the oats in milk 
  2. Place oats and milk in microwave for 30 secs
  3. Take out the bowl and mix for 20 seconds then add cinnamon and sugar cubes 
  4. Let the sugar cubes melt for a little 
  5. Add the peanut butter to the bowl and mix for 20 secs
  6. Place bowl again in the microwave for 30 seconds
  7. Mix the bowl for 20 secs then add the yogurt and mix till it is fully combined
  8. Then add the oatmeal mixture in a serving bowl.
  9. Top the oat meal with the ground ginger. 
  10. Add additional toppings of your choice 
  11. Then enjoy!!
It can be stored in the fridge for up to 2 days however wait to it reaches room temperature.
